What you need
- penne pasta
- red onion
- garlic cloves
- mushrooms
- lemon
- soy milk
- tahini
- parsley
- nutritional yeast (optional)
How to make creamy garlic mushroom pasta
Put your penne on to cook according to packet instructions.
Chop the red onion and add to a large pan with some oil. Pan fry until softened.
Thinly slice and add the garlic to the red onion and cook for a further 1-2 minutes.
Meanwhile, slice the mushrooms, then add to the pan. Stir them in occasionally until they start to shrink and soften.
When the pasta is done, drain and add to the pan with the onion, garlic and mushrooms.
Pour in the soy milk and tahini, along with the lemon juice, parsley, nutritional yeast, salt and pepper. Stir everything together and enjoy!
If you have access to soy cream, then you can switch out the soy milk and tahini combination for this (though it may be more expensive). I enjoy using ingredients I usually buy/have in my pantry to make things easier and more affordable over all, but it might be a nice option you can give a go!
This would work well with all different varieties of pasta shapes, such as tagiatelle or spaghetti!
The whole dish adds up to just £2.25, making it only 57p per portion!

Autumn Apple & Pear Porridge

Ingredients
- 2 apples (chopped into bite size pieces )
- 2 pears (chopped into bite size pieces )
- 2 tsp cinnamon
- pinch of nutmeg
- 125 g porridge oats
- 350 ml plant milk
- 350 ml water
- maple syrup
- handful of cranberries/raisins
Instructions
Add the apples to a pan over medium heat, with 1 tsp of cinnamon, a pinch of nutmeg and a drizzle of maple syrup. Mix together and simmer.
Meanwhile, start to cook your porridge by adding the oats and liquid into a pan, along with another tsp of cinnamon. Stir on a low to medium heat until creamy.
Keep an eye on the fruit, adding a splash of water if it needs it. It’s ready when everything has softened and formed a sort of compote. The longer you cook it, the more it will reduce and soften.
Serve everything together, with a sprinkling of cranberries and an extra drizzle of syrup.

- This recipe can work with any fruit you fancy! I often do this with berries instead, and for the season blackberries could be perfect!
- I used 125g of porridge oats for healthy sized portion but feel free to reduce it down to around 80/90g per person (and 225ml each of water and milk) if you want a smaller portion size.
