These Einkorn Pancakes are soft, fluffy, buttery, and a whole grain pancake the whole family will love. They're made with buttermilk and all-purpose einkorn flour which is gentler on the digestive system than regular flour.

You can also add your favorite chocolate chips and make Chocolate Chip Einkorn Pancakes or, of course, blueberries for Einkorn blueberry pancakes. Serve with your favorite syrup, jam, or powdered sugar.

Einkorn Pancakes Recipe

You're gonna love these Einkorn pancakes. They are so light and fluffy and made with all-purpose einkorn flour from Einkorn.com. Einkorn flour works and tastes a lot the same as the all-purpose flour you typically buy at the store, however it is an ancient grain that is much easier for us to digest.

Since it doesn't have as much gluten as regular flour, it takes a little longer to absorb liquids so you will need to let the batter sit for about 10 minutes before you cook the pancakes. Just make the batter up as you would with normal pancakes, let it sit for 10 minutes, and then quickly stir it again before you cook the einkorn pancakes.

This buttermilk pancake recipe is also great to use to make sourdough discard pancakes. Just add 1-2 tablespoons of discard sourdough to the batter and you'll be amazed by the flavor.

Einkorn Flour Pancakes Ingredients

  • All-Purpose Einkorn Flour - you can order Einkorn flour online. It's an ancient grain that isn't gluten-free, but is easier on our digestive systems so is often suitable for those with a gluten intolerance.
  • Sugar - this recipe calls for white granulated sugar.
  • Baking Powder and Baking Soda - these help keep the pancakes super light and fluffy.
  • Salt - sea salt works great.
  • Butter- you can use salted or unsalted butter, depending on what you typically use in your pancakes. It should be melted before mixing into the batter.
  • Buttermilk - you may need to add a little more or less depending on how fluffy or thin you like your pancakes to be.
  • Eggs - any kind of large eggs will work great.

How to Make Buttermilk Einkorn Pancakes

  1. Mix the dry ingredients. In a medium-sized mixing bowl, combine the einkorn flour, sugar, baking soda, baking powder, and salt. Mix with a whisk making sure all the "dry" ingredients get mixed in.
  2. Combine the wet ingredients. With another mixing bowl, combine the melted butter, buttermilk, and eggs. Whisk until all the ingredients are combined.Add the buttermilk mixture into the flour mixture and stir until well mixed, but leave some lumps. Do not overmix.
  3. Rest the batter. Let the batter sit for 10 minutes, then add a little more buttermilk if you want thinner pancakes. (The Einkorn flour takes a little longer to absorb the flour than regular all-purpose flour so the batter will become thicker during the 10 minutes)
  4. Cook the pancakes. Heat a pan or griddle over medium heat, then spray with nonstick cooking spray.Pour about ½ cup of batter onto your hot griddle at a time. Cook the pancakes until there are bubbles popping on top and the underside is golden brown. Flip the pancake over with a spatula and cook the other side until the buttermilk einkorn pancake is golden brown.
  5. Serve. Continue until all batter has been cooked, then serve with your favorite syrup, butter, or jam. Enjoy!

    So I have a love/hate relationship with pancakes, especially in the past when I had to use gluten-free flour blends, they were the worst! And no matter how hard I tried they would come out thick and dry and crumbly. Those were the “dark ages” in my baking life. Then my family started to use enkorn and I found your recipe, and let me just say I will never ever use another pancake recipe in my life! They are seriously the best pancakes I have ever had!     Made one change...I separated the egg yolks and the whites adding the yolks with the buttermilk and melted butter to the dry ingredients. I whipped the egg whites to soft peaks and folded them into the pancake batter. Very light and fluffy. Delish.
