Healthier strawberry oat bars allow you to enjoy delicious breakfast bars with less guilt. Bursting with strawberries, these chewy oatmeal bars are a sweet way to start or end the day.

One of the best things about summer is so much fresh fruit.

This year, we planted strawberry plants in our garden and they have done so well.

There are so many fresh strawberries that I just have to bake with them.

And let me tell you, there’s nothing quite as good as fresh strawberries you’ve grown yourself.

A Perfect Strawberry Dessert or Breakfast

While there are tons of strawberry baked goods like strawberry muffins or fresh strawberry pie to choose from, these oat bars are some of my favorites because they are perfect for breakfast or dessert.

Since they are loaded with wholesome oats and fresh berries, you can feel good starting your day off with these bars.

But they are also perfectly sweet, making them a delicious way to satisfy your sweet tooth after dinner.

How to Make Strawberry Oat Bars

Making these bars is very easy. You don’t even need an electric mixer.

To make these strawberry oatmeal bars, start by adding the oats, flour, brown sugar, salt and ginger to a large mixing bowl and whisking them together.

When the ingredients are evenly combined, stir in the melted butter. The mixture will form little clumps.

Divide the mixture in half and set half aside. Then line an 8×8 baking dish with parchment paper.

Press half of the crumble mixture into the dish to form a bottom crust. Now spread half of the diced strawberries over the oat crust.

Sprinkle the strawberries with cornstarch, lemon juice and regular sugar in that order. Then spread the rest of the strawberries evenly out over top and add the rest of the sugar on top.

Now crumble the rest of the oat mixture evenly over top. The rest of the mixture won’t completely cover the strawberries and that’s ok.

Then bake at 375 for 35-40 minutes or until the fruit is bubbling and the topping is golden.

A Glaze Finish

You can serve the bars as is once they are completely cool or you can take them over the top with a homemade glaze, which I highly recommend.

To make the glaze, whisk powdered sugar, vanilla, and milk together in a mixing bowl until the ingredients are smooth.

Drizzle the icing over top of the completely cooled bars.

Tips and Tricks for the Best Strawberry Oat Bars

Here are some tips and tricks to make sure your oat bars turn out perfectly each time you bake them.

  • Make sure to use rolled oats, not steel cut oats. The steel cut oats won’t cook the same as rolled oats and will result in a firmer, heavier bar.
  • The strawberries should be fresh & finely diced for best results.
  • You could substitute another diced fruit like peaches into these bars and have delicious results.

Ingredients

For The Strawberry Oat Bars

  • 1 cup old fashioned rolled oats
  • 3/4 cup flour
  • 1/3 cup brown sugar
  • 1/8 tsp ground ginger
  • 1/4 tsp salt
  • 6 tbsp butter melted
  • 2 cups diced strawberries you want them small
  • 1 tsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp sugar divided

For The Glaze

  • 1/2 cup sifted powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp milk

Instructions

  • To a large mixing bowl add the oats, flour, brown sugar, salt, and ginger. Whisk them together until evenly combined.

  • Stir in the melted butter until the mixture's clumpy. Separate 1/2 of the crumble mixture and set it aside.

  • Line an 8x8" baking dish with parchment paper. Add the rest of the crumble to it, and firmly press it in, out, and down to form the bottom crust.

  • Spread half of the strawberries evenly out over top. Sprinkle the cornstarch over top, followed by the lemon juice, and then half of the regular sugar.

  • Spread the rest of the diced strawberries evenly out over top, and sprinkle the rest of the sugar out over top.

  • Sprinkle the remaining crumble mixture evenly out over top. There will be some fruit showing through and that's ok.

  • Bake the bars at 375 degrees for 35-40 minutes, or until the fruit's bubbly and the crumble topping is golden brown.

  • Allow the bars to cool completely.

To Make The Glaze

  • In a mixing bowl, whisk all of the glaze ingredients together until smooth.

  • Lift the cooled oat bars out of the baking dish using the parchment paper ends. Transfer them to a cutting board.

  • Drizzle the glaze evenly over top.

  • Slice and serve the bars. Serve & enjoy!
